Abstract


The use of 91 plants species in the diet of rural communities, located in mountain cloud f orests (Yungas) of the Eastern Valley s of Quebrada de Humahuaca (Salta province, Argentina) is analyzed. Native and exotic species, scientific and common ñames, paris of the plants employed, methods of collection and application, área of origin and/or geographical distribution are considered. Comments on the commercial relationships of the región are also included. The way of cooking some typical dishes are commented in the appendix.
